Ingredients

1 avocado (large, ripe)
3 cups lettuce (rinsed and shredded)
1 lime
1 tablespoon olive oil
1/2 jalapeno chilies (seeded, optional and minced)
1 tablespoon parsley (minced)
salt and ground black pepper

Directions

1Mix together the lemon juice and rind, olive oil, jalapeno, parsley, salt, and pepper in a small bowl.
2Place the lettuce in a salad bowl, add 1 tbsp. of dressing and carefully mix until evenly coated. Divide between 2 plates.
3Cut the avocado in half, remove the pit, and carefully separate the flesh from the skin with a spoon while keeping each piece in tact.
4Place the avocado on the lettuce and drizzle with dressing.
