Ingredients

2 cups romaine lettuce (torn)
1/2 avocado
1/2 cups black beans (drained and rinsed)
1/2 cups tofu (cubed pan sautéed)
3 mozzarella balls (mini marinated)
2 tablespoons sunflower seeds (lightly salted)
1 tablespoon scallions (or any fresh herbs, if you have them)
dressing (your choice, I used a squeeze of lemon and olive oil)
