Description

This tropical inspired cake is super moist and delicious. Lime and banana make a great pair to flavor this simple cake. Cream cheese gives the cake a little bit of tartness and helps it stay super moist. A sprinkling of lime zest and a drizzle of icing make the cake visually stunning and perfect for celebrations. This recipe is super simple, with only 8 ingredients that you likely already have on hand.

Ingredients

300 grams flour
1/2 teaspoons baking powder
salt
180 grams muscovado sugar (if not available, use brown sugar)
1 eggs
150 grams low-fat cream cheese
1 mashed banana (drizzled with lime)
1 lime zest (and juice)

Directions

1Preheat oven to 400 degrees Fahrenheit.
2In a large bowl, mix the flour with the baking powder, salt and sugar.
3Make a well in the center and pour the egg and cream cheese. Mix and add the mashed banana drizzled with the lime juice and half of the lemon zest.
4Pour the mixture into a mold greased with a little butter.
5Bake the cake for 40 to 45 minutes.
6As soon as the cake is cool, sprinkle it with the remaining zest and if you want with icing sugar .
