Description

This crust-less pie delivers a pleasant surprise. Loaded with cantaloupe, you can serve it as an appetizer, as a side dish, or even as a dessert. The cantaloupe is complemented with just a hint of mozzarella cheese and basil to give it a European flair. This easy recipe is ready in just 20 minutes.

Ingredients

1 cantaloupe (large)
2 mozzarella cheese (balls)
15 basil leaves
1 tablespoon olive oil
sea salt

Directions

1Peel the cantaloupe and remove seeds.
2Cut in slices and then in small cubes.
3Cut the mozzarella in slices, and then in cubes.
4In a bowl, mix chopped basil, olive oil, and salt.
5Mix in cantaloupe and mozzarella, by gently lifting.
6Store tartare in a cool place or serve immediately.
7Serve in glasses, or use a circle or rectangle form.
8Place form on a plate, fill with tartare, even out with the back of a spoon.
9Serve with toasted bread; or an arugula or prosciutto salad.
