Taco Tuesdays just got a whole lot tastier! These Chicken Salad Tacos are a nutritious and refreshing take on a traditional favorite. And with only 130 calories per taco, you can have a few. All these ingredients are wrapped in warm corn tortillas. Tuesday can’t come soon enough! Ingredients

2 boneless skinless chicken breasts
salt and ground black pepper
1 whole scallions
1/2 red bell pepper
1 cup kale
1 stalk celery
2 tablespoons light mayonnaise
1 teaspoon light sour cream
1 lemon
2 tablespoons fresh cilantro
adobo
5 corn tortillas

Directions

1Salt and pepper the chicken breasts and saute, turning, until cooked. Set aside for 5 minutes and then cut into large cubes.
2Mix together the mayonnaise, sour cream, lemon juice and rind, cilantro, and adobo. Add the diced chicken, scallion, red bell pepper, kale, and celery.
3Mix well and serve in warm corn tortillas.
