Description

Rich in hazelnut and chocolate flavor, this Chocolate and Hazelnut Cake combines cocoa powder and crushed hazelnuts into the cake batter for a rich chocolatey, nutty, and buttery tasting cake. Carbonated water and yeast add a bit of lift to the batter making this cake light and moist in texture. A Nutella and chocolate icing strewn with chopped almonds or hazelnuts is the crowning glory of this decadent and absolutely scrumptious cake. A must try if you are a chocolate lover.

Ingredients

5 eggs
300 grams sugar
2 tablespoons vanilla extract
100 grams hazelnuts (crushed)
225 grams flour
50 grams cocoa powder
2 1/4 teaspoons dry yeast
150 milliliters sunflower oil
150 milliliters carbonated water
100 grams dark chocolate (chopped)
1 tablespoon Nutella
50 grams almonds (or hazelnuts, chopped)

Directions

1Preheat the oven to 150 degrees Celsius.
2Whip the eggs until creamy. Slowly add the sugar and vanilla and mix well.
3Add the crushed nuts, flour, cocoa powder, and yeast. Beat until smooth. At the end, add the oil and wáter and mix well.
4Pour the batter in a greased baking pan.
5Bake for 75 to 90 minutes.
6Remove from the oven and let it cool.
7Melt the chocolate and Nutella in a double boiler.
8Pour the icing the cake and sprinkle with nuts on top and serve.
