Description

Made with cake flour and buttermilk, these intensely chocolatey muffins manage to be moist and tangy at once. Setting them over the edge, they're finished with melted dark chocolate once they're done baking. You can enjoy them for breakfast, but given their luxurious approach they're unquestionably dessert-worthy, too. Don't be afraid to serve them warm with a scoop of ice cream and fruit coulis if so desired.

Ingredients

150 grams cake flour
100 grams sugar
7 grams baking powder
50 grams chocolate chips
salt
100 grams vegetable oil
200 grams buttermilk
1 eggs
100 grams dark chocolate
1 tablespoon butter
4 tablespoons water

Directions

1Preheat the oven to 190 degrees Celsius.
2In a bowl, add the flour, sugar, baking powder, chocolate chips, and a pinch of salt. Mix well.
3In a separate bowl, add the oil, buttermilk, and egg and mix well.
4Combine the wet ingredients with the dry ingredients and mix well.
5Fill muffin pans 2/3 full and bake for 20 to 25 minutes. Test with a toothpick.
6Allow to cool.
7In a double boiler, melt the chocolate with the water on low heat and stir continuously with a wooden spoon.
8Bring to a boil, remove the oan from the heat and add the butter.
9Allow to cool slightly, and then add the topping to the muffins.
