Description

This salad is a healthy and filling dish that is studded with fresh vegetables. It gets its vibrant green color from green bell pepper, peas, and scallions, all of which also add a ton of flavor. Try this dish with a roasted chicken breast or a piece of grilled steak for a complete and filling meal or add a spoonful over a lightly dressed green salad for a healthy and light lunch.

Ingredients

2/3 cups rice
cooking spray
1 teaspoon chicken bouillon (powder)
1/2 green bell pepper (diced)
1/2 cups frozen peas
1 chile pepper (poblano, grilled, peeled, and cut into strips)
2 scallions (minced)
salt and ground black pepper

Directions

1Boil 1 cup of water. Remove from heat and add the rice. Set aside for 3 minutes, drain, and wash until the water comes off clear.
2Spritz a pan with cooking spray and saute the rice until it changes in color. Add 1 1/2 cups water and the bouillon and stir. Lower the heat, cover the pan, and cook for 15 minutes, until the rice is cooked. Remove the rice from the heat and let cool.
3Defrost the peas. Mix with the rice, bell pepper, poblano, and scallions. Add salt and pepper and serve.
