Description

Featuring the flavors of pizza, these individual, savory cupcakes are dotted with oregano and infused with the flavor of salty, nutty Parmesan cheese. As the name suggests, the otherwise straightforward batter features ketchup, too. You can add whatever fillers you prefer, though, so consider the likes of finely chopped pepperoni, garlic or onions. In any case, just remember that they're best served warm.

Ingredients

200 grams flour (the variety used for making pizza dough)
1 teaspoon baking powder
60 grams parmesan cheese (grated)
1 tablespoon oregano
70 grams ketchup
1 medium eggs
100 grams milk
100 grams extra-virgin olive oil
50 grams black olives (chopped)

Directions

1Preheat the oven to 180C.
2Combine the flour, baking powder, oregano, and parmesan cheese in a bowl.
3In another bowl beat together the egg, oil, ketchup, and milk.
4Pour the liquid ingredients onto the dry ingredients, add the black olives and quickly combine.
5Pour the batter into the muffin liners.
6Bake for approximately 20 minutes.
7Remove from the oven and serve warm.
