Homemade Anchovies in Vinegar

Description

This recipe combines the salty and smooth anchovy with the tartness of white vinegar that pairs perfectly with a side of French fries. Anchovies are packed with protein and healthy fats, such as omega-3 fatty acids that support cognitive function, reduce inflammation and reduce risk of diseases. This main dish can provide a light meal that is full of flavor and can be made in 30 minutes or less.

Ingredients

1 kilogram anchovies
salt
white vinegar
water
garlic cloves
extra-virgin olive oil
fresh parsley

Directions

1Place the anchovies in cold water and ice to release the blood. Freeze for 24 hours to kill any bacteria.
2Defrost the anchovies and place skin-side down on a baking sheet. Add plenty of salt and cover with the vinegar and water solution in a one to four ratio. Refrigerate overnight.
3Remove the anchovies from the refrigerator and drain. Place the anchovies in a resealable container. Coat with garlic, olive oil, and parsley.
4Place in the refrigerator for 2 hours. Remove and serve with French fries.
