Description

Lemon cookies are a staple of English tea time. However, you can bring all the sophistication of a high tea to your table with these lightly sweetened lemon cookies. Made with fresh lemon juice and zest, each bite of these lemon cookies have a burst of refreshing citrus flavor. These cookies make a great addition to a glass of iced tea on a warm summer afternoon. They also pair wonderfully with a hot cup of tea in the wintertime.

Ingredients

200 grams butter (cubed and room temperature)
170 grams sugar
270 grams flour
1/2 teaspoons salt
2 lemon
2 tablespoons fresh lemon juice

Directions

1In a food processor, pulse together the butter, sugar, flour, salt, and lemon zest.
2When it starts to form a ball, stop.
3Add the lemon juice and pulse another 2 to 3 times.
4Roll the dough out into a long sausage shape and wrap in plastic wrap.
5Refrigerate for 30 minutes.
6Preheat the oven to 160 degrees Celsius.
7Line a baking tray with parchment paper.
8Remove the dough and the plastic wrap.
9Cut the dough into 1-centimeter wheels and place them on the baking tray.
10Bake for 10 minutes or until the edges are golden.
11Do not move them much until they have cooled.
