100 grams Quinoa Flour
150 grams Tipo 0 flour
200 grams salted butter (chilled and cut into pieces)

2 egg yolks
1 tablespoon water (or milk, if needed)
3 apples (golden delicious)

1Chop the almonds coarsely and combine them with the flour, sugar, cornmeal, butter, egg yolk, grated orange peel, and the grated Tonka bean in a bowl.
2Mix the ingredients together with a wooden spoon at first, then use your fingers, the dough should resemble oatmeal and crumble easily.
3Refrigerate this mixture for at least 30 minutes.
4In the meantime, prepare the orange curd by placing the orange juice and peel in a bowl with the sugar and mix with a wooden spoon.
5Beat the egg yolks and add them to the bowl.
6Place the bowl over a double boiler and cook, stirring continuously, until the curd thickens.
7Remove the curd from the heat as soon as it reaches the desired consistency and add the softened butter and some more orange peel.
8Stir well to incorporated the butter.
9Assemble the cake by making a layer of dough “crumbs” on the bottom of an 18 centimeter cake pan lined with wax paper and pressing lightly on the crumbs.
10Next, add a generous layer of orange curd and cover with the remaining crumbs.
11Bake in a preheated oven at 160C for approximately 40 minutes.
12Remove the cake from the oven and cool before serving.
