Description

This spring delight is perfect for Easter. Served after dinner, it’s a great way to end your day. The natural orange flavor can help you relax as you begin preparations to retire for the night. The sweetness will satisfy your children.

Ingredients

3 eggs
50 grams superfine sugar
3 1/2 tablespoons whole milk
2 tablespoons olive oil
150 grams flour
2 teaspoons baking powder
4 1/4 cups orange juice
200 grams honey
4 tablespoons orange flower water
2 orange
dates
2 tablespoons orange flower water

Directions

1Preheat oven to 355°F.
2Separate the egg whites from the yolks.
3Beat the yolks with the sugar until the mixture achieves a mousse-like texture.
4Add the milk and olive oil and mix well.
5Add the flour and baking powder and mix.
6Whisk the egg whites and add them to the dough.
7Butter the molds, even if they are made of silicone. Fill each mold 2/3 of the way and bake for 20 minutes.
8While they bake, prepare the syrup by heating the orange juice and honey until they boil.
9Remove the mixture from heat and add 4 tablespoons of orange blossom water.
10Remove the babas from their moulds and quickly soak them with the hot syrup. Cover and let rest for at least 8 hours.
11Peel the oranges. Remove the pits from the dates and cut the dates lengthwise. Place the fruits in a bowl.
12Pour the remaining 2 tablespoons of orange blossom water over the fruit and toss.
13To serve, garnish the babas with the fruit salad.
