Description

This simple gnocchi needs only 4 ingredients and 40 minutes to come together. While it takes a little bit of effort to shape these fluffy pasta pillows, it will be well worth it when you take your first bite. The rich ricotta cheese adds a ton of flavor and pairs well with a variety of sauces, everything from brown butter and petso to a simple and savory tomato sauce.

Ingredients

220 grams ricotta
3 egg yolks
200 grams flour
salt

Directions

1Mix the egg yolks and the ricotta.
2In a large bowl, mix the flour with salt, and dig a well in the center. Add the ricotta and mix until you get a smooth ball.
3Flour work surface.
4Cut the dough into pieces and roll into sausage shapes, all the same size.

6Cut the sausages into chunks, all the same size.
7Roll each piece over the tines of a fork on one side, while pressing lightly with your thumb on the other side to make an indentation.
8Cook in a large pot of boiling salted water.
9When they rise to the surface, wait a few seconds, and drain.
10You can serve gnocchi with a little olive oil and grated parmesan, or with homemade tomato sauce (even better: a Provencal stew sauce).
