Description

This is a good recipe to make on a day-in. Most of the job is done by letting the dough rise on its own. With about three hours worth of "rising time", you'll have a chance to catch up on that episode of your favorite show that you had to miss last week. Buttermilk is extremely easy to make. If you don't have lemons, you can use white vinegar. The milk should be lightly thickened and slightly curdled at the end of ten minutes, after which you will add it to a mixture of flour, eggs, sugar, salt, oil, and yeast. Curl up for an hour-long nap while this sweet bread bakes away. The thick and delicious aroma will likely wake you on time, but remember to set an alarm just in case.

Ingredients

300 milliliters milk (warm)
2 tablespoons lemon juice
2 eggs
1/2 cups oil
3/4 cups sugar
1/2 teaspoons salt
500 grams buckwheat flour
2 teaspoons instant yeast

Directions

1Make the buttermilk by mixing warm milk and lemon juice. Let stand for 10 minutes,
2Using an electric mixer, or bread making machine, add the ingredients in this order: eggs, warm buttermilk, oil, sugar, salt, flour, and yeast. Mix for 10 minutes to get a smooth but sticky dough. If necessary, add a little more flour or warm buttermilk. Place the dough in a plastic bag, close tightly, and let rise for 2 hours.
3Place the dough on a floured surface, and knead lightly to expel air. If the dough is too soft and sticks to your hands, add a little more flour, but not too much otherwise the bread will be tough. Shape the bread loaf or loaves, and place on a large, greased baking tray. Use a sharp knife to make a few diagonal cuts on the top of the dough. Let dough rise for 40 minutes more.
4Preheat oven to 180 degrees Celsius.
5Bake the bread for about 1 hour, or until golden.
6Cool on a wire rack, and store in an airtight container.
