Spanish Ham Sandwich with Caramelized Onions and Parmesan Cheese

Description

Caramelized onions have a rich, deep, wonderfully sweet flavor and are incredibly versatile when it comes to pairing with other foods. Here they are used as a sandwich condiment, transforming what would be an otherwise ordinary "ham and cheese" into something else entirely. Toasting the ham in the same skillet also helps, as does using the freshest slicing tomato you can find. Layer on some escarole (or chard) and cheese, and lunch is served.

Ingredients

1 tablespoon butter
1 onions
salt
1 tablespoon sugar
1 slice virginia ham
2 slices bread
1/2 tomatoes
greens
parmesan cheese

Directions

1Add the butter to a skillet on medium-low heat. Add the onions and season with salt. Saute for 5 minutes.
2Add the sugar and lower the heat to low. Cook without stirring for 15 minutes. Remove and set aside.
3Sear the ham in the skillet for 2 minutes on each side.
4Toast thinly sliced bread, add the ham, onions, tomatoes, escarole, and a couple of slices of cheese.
