2 tablespoons olive oil
1 onions (diced)
3 garlic cloves (minced)
1/2 red pepper (seeded and diced)
1 kilogram pumpkin (peeled and diced)
1 teaspoon ground cumin
1 teaspoon pepper (powder)
1 can black beans (rinsed and drained)
100 grams corn chips (like Doritos)
coriander (Chopped)

Directions

1Heat a large and high frying pan with the olive oil.
2Add the onions, garlic, and red pepper. Cook for 2 to 3 minutes, or until the onions are translucent.
3Add the diced pumpkin, cumin, and pepper powder.
4Season with salt and pepper.
