Ingredients

2 1/4 teaspoons yeast
1/4 cups milk (lukewarm)
3 eggs (separated)
1/4 cups melted butter
180 grams melted butter (cooled to room temperature)
1/4 cups sugar
1 tablespoon salt
4 cups flour
2 1/2 cups milk (lukewarm)

Directions

1Mix the yeast with the cup of lukewarm milk and let rest 5 minutes.
2Mix the egg yolks with the remaining lukewarm milk and the butter. Add to the yeast mixture.
3Add the sugar and salt and then the flour alternating with the milk, flour last.
4Beat the egg whites until peaks are formed and fold into the batter.
5Cover with plastic wrap and let rest in a warm place until doubled in volume, up to 1 or 2 hours.
6Lightly mix to deflate the batter. Make waffles with the batter, following the directions on the waffle iron.
