This bread is studded with blueberries, raisins, and walnuts for a hearty and delicious breakfast. A simple yeasted whole wheat dough is mixed with the fruits, nuts, and spices then baked, creating a heavenly loaf of bread and making your whole house smell like cinnamon. This bread is great simply toasted with a pat of butter, or if you want something a little more decadent use it in place of regular bread when making french toast.

ingredients

1 1/3 cups whole wheat flour
3/8 teaspoons salt
3/4 cups milk
1/2 cups blueberries
1/2 cups raisins
1 1/3 cups whole wheat flour
1/4 teaspoons yeast
6 tablespoons milk (at room temperature)
1/4 cups vegetable oil
1 eggs
7 tablespoons whole wheat flour
5/8 teaspoons salt
2 1/4 teaspoons yeast
1/2 cups sugar
3 tablespoons cinnamon (powdered)
3/4 cups walnuts (crushed)

directions

1Mix all of the ingredients for “Mixture 1” together. Once everything is completely mixed, place the dough in a bowl and cover it with plastic wrap. Let the dough sit in room temperature for 12 to 24 hours.
2Mix all of the ingredients for “Mixture 2” together with a wooden spoon. Once everything is completely mixed, place this mixture in a separate bowl as well and place it in the refrigerator for a minimum of 8 hours.
3Cover a table or tray with flour, take both mixtures out and cut the dough from both of the mixtures into small loafs.
4Place all of the loaves together in a bowl and add the flour, salt, yeast, sugar and cinnamon and knead everything together.
5Add the walnuts and continue kneading the dough, Make sure to knead the dough for only 10 minutes.
6Add some cooking oil into a bowl (make sure to spread it around the inside of the bowl) and place the dough inside. Let the dough sit for 60 minutes or until it “inflates” and grows about 1 1/2 times its original size.
7After the 60 minutes take the dough out and set it on a tray or table that is coned in flour. Shape the dough into a rectangular shape, place it in a rectangular mold or on a simple baking sheet.
8Sprinkle a mixture of sugar and cinnamon on the dough, place the dough in a mold or baking sheet (which has been previously sprayed with oil and flour). cover the dough and let it sit for another 45 to 60 minutes.
9Preheat the oven to 204 C, put the pan or mold inside the oven, and then lower the heat to 170 C and let it cook until the bread is completely baked, about 1 hour.
