Ingredients

5 cups all-purpose flour (sifted, preferably a fine southern flour; see headnote)
1 tablespoon baking powder
1 teaspoon baking soda
1/4 cups sugar
2 teaspoons salt
1 cup vegetable shortening (firmly packed, or lard or a half-and-half mixture of the two)
2 cups buttermilk
1/4 ounces active dry yeast (dissolved in 1/4 cup very warm water, 105° to 115° F.)
