Ingredients

16 ounces penn pasta, cook and drain (measure 16 ounces uncooked, I use half of a 900-gram package)
3 cups cooked ham (cubed, or use as much as desired)
5 tablespoons butter
1 teaspoon mustard powder
1 teaspoon ground black pepper
1 teaspoon seasoning salt (or 1/2 teaspoon white salt)
1/4 teaspoons cayenne pepper (optional or to taste)
1 onions (small, finely chopped)
1 tablespoon minced garlic (fresh, or to taste)
1/4 cups all-purpose flour
3 cups cream (half-and-half, or use half milk and cream)
2/3 cups grated parmesan cheese (divided)
4 1/2 cups cheddar cheese (grated, a little more won't hurt)
