Ingredients

1 liter milk
1 teaspoon vanilla extract
250 grams sugar
60 grams flour
60 grams corn flour
8 egg yolks
1 kilogram flour
500 grams vegetable shortening
355 milliliters coca-cola (cold)
superfine sugar

Directions

1For the Pastry Cream:
2In a saucepan, heat the milk, vanilla extract, and 125 grams sugar.
3In a bowl, add the flour, corn flour, the rest of the sugar, and egg yolks. Mix.
4Temper the egg yolks by adding a dash of hot milk. Repeat 3 times.
5Add the tempered egg mixture to the rest of the hot milk and stir continuously with a wooden spoon over low heat until it thickens.
6Let it cool.
7For the Empanadas:
8In a bowl, add the flour and shortening. Use your hands to mix.
9Make a hole in the center and add the Coca-Cola. Mix.
10Place on a flat surface and knead.
11Cover the dough with plastic wrap and let it rest for 30 minutes at room temperature.
12Preheat the oven to 180 degrees Celsius.
13Stretch the dough and cut out circles.
14Add pastry cream to each circle. Close and seal the edges.
15Place on a baking tray.
16Bake for 15 to 20 minutes or until golden brown at the bottom.
17Place on a cooling rack and sprinkle with superfine sugar.
