1 tablespoon olive oil
1 pound carrots (peeled and chopped)
1 onions (medium, chopped)
3 teaspoons gingerroot (crushed, fresh)
1/2 cups cooked rice
1 sweet potatoes (peeled and cubed by 1/2 inch)
4 cups vegetable stock (or 4 cups chicken stock)
1/2 cups applesauce
1/2 teaspoons cinnamon
1/2 teaspoons turmeric
ground black pepper (I use a lot and this gives it a little bite)
