Potato Waffles and smoked salmon

Description

Proof that waffles don’t have to be boring. Slices of salmon adorn each waffle, adding bold flavor. Topped off with cream, you’ll love the richness of this breakfast.

Ingredients

160 grams flour
340 grams potatoes
1 teaspoon baking powder
10 grams salt
30 grams sugar
150 grams butter (melted)
5 eggs
chives (Chopped)
40 grams white cheddar cheese (grated, or comté)
8 deciliters milk
smoked salmon
cream
lemon

Directions

1Cook potatoes in boiling water and puree them without adding milk. Let cool.
2In a bowl, combine flour, baking powder, salt, sugar, eggs, potato puree, chives, grated cheese, and melted butter.
3Gradually add the milk, stirring constantly.
4Let the dough rest for 2 hours.
5Heat a waffle iron and cook waffles until well browned.
6To serve, place a small piece of smoked salmon on each waffle, garnish with cream, pepper and lemon zest.
