Ingredients

4 1/2 cups pumpkin purée (fresh, made from ~3.8 pounds sugar pumpkin)
1/4 cups apple cider (sweet, or apple juice, more if needed)
1 cup sucanat (or brown sugar, unpacked)
4 tablespoons pure maple syrup (to taste)
1 tablespoon ground cinnamon
1/2 teaspoons ground nutmeg
1 teaspoon fresh lemon juice (enhances flavour and helps preserve)
1 teaspoon pure vanilla extract
1 pinch fine sea salt
