Ingredients

1 lemongrass (long piece of)
4 tablespoons red curry paste
7 lime leaves (fresh, washed)
3 cans coconut milk
3 cups chicken broth
2 chicken breasts (very thinly sliced)
6 mushrooms (sliced)
1 red bell pepper (thinly sliced)
1 cup beansprouts
1/2 cups sliced carrots (thinly)
1/4 cups fresh cilantro (chopped)
4 red chili peppers (small, dried or fresh)
2 handfuls rice noodles (pad thai style)
juice (a lime)
7 carrots (mini, thinly sliced, reserve a couple of pieces to garnish)
1 green onions (scallions thinly sliced, to garnish)
