12 carrots (huge, enough to fill 2 cookie sheets, without having the cut and cleaned carrots overlap)
1 head garlic
4 tablespoons chopped cilantro (freshly)
1/4 cups olive oil (or so of)
4 shallots (peeled and thinly sliced)
2 tablespoons butter
