2 tablespoons olive oil
1 tablespoon Galliano
1 1/2 cups onions (finely chopped)
2 cloves garlic (thinly sliced)
1 1/2 carrots (large, minced)
4 tablespoons unsalted butter
1 1/2 cups arborio rice
3/4 cups dry vermouth
12 ounces roasted red peppers (pureed with enough water to measure 3 cups, can substitute your own roasted peppers)
3 cups chicken stock
3 cups vegetable stock
1 dash vinegar (optional)
2 teaspoons dried oregano
2 teaspoons dried tarragon leaves
3/4 cups grated parmesan cheese (or 1/2-3/4 cup romano cheese)
