Ingredients

4 1/2 cups flour
330 grams piloncillo (or 1 1/3 cups dark brown sugar and 1 1/3 tbsps. molasses)
2 tablespoons baking powder
cinnamon (in pieces)
salt
115 grams lard (melted and cooled)
2 eggs
1/4 liters milk

Directions

1Preheat the oven to 180 degrees Celsius.
2In a bowl, add the flour, piloncillo, baking powder, cinnamon, and a pinch of salt. Stir.
3Add lard, eggs, and milk. Mix with a wooden spoon.
4Pour the dough onto a flat surface and knead. Add flour as needed.
5Separate into portions and shape the semitas into small 1-centimeter-thick patties.
6Place on a baking tray.
7Bake for 20 to 30 minutes, until the bottoms are golden brown.
