Ingredients

30 ounces cannellini beans (or 1/2 lb dried beans, soaked overnight in water, drained)
1 tablespoon olive oil
1/2 yellow onion (large, chopped)
1 tablespoon chopped fresh thyme
2 garlic cloves (minced)
1/8 heads green cabbage (cut into 1/2 inch pieces)
1 cup fresh tomatoes (chopped)
2 celery ribs (cut into 1/2 inch pieces)
1 1/2 carrots (cut into 1/2 inch pieces)
5 cups vegetable stock (or more, or canned vegetable broth)
1 potatoes (medium, cut into 1/2 inch pieces)
1/4 cups fresh basil (chopped)
1/4 heads red cabbage (cut into 1/2 inch pieces)
2 zucchini (cut into 1/2 inch pieces)
2 teaspoons salt
1/2 cups grated parmesan cheese
Tabasco Pepper Sauce (optional)
